Candice's Authentic Crepes

Serves: 15 crepes
Ingredients
- 1 ½ cup flour
- 1 T sugar
- ½ t baking powder (or less)
- ½ t salt
- 2 c milk
- 2 T melted butter
- ½ t vanilla
- 2 eggs
Instructions
- Melt butter in bowl and let cool. Mix in vanilla and eggs one by one beating with whisk each time. Add half the milk and all the flour by halves stirring vigorously. Mix in remaining dry ingredients then the rest of the milk. It is even better if batter is made the night before. Makes about 15 crepes. (never enough for my family. I always have to at least double this recipe). If making dinner crepes, do not add sugar or vanilla. Favorite crepe combinations: cream, chocolate sauce, and frozen strawberries warmed and smashed (or fresh); butter, sugar and lemon; vanilla pudding, cream and bananas; jam and butter.
