This special occasion recipe comes from my mom. It is so good! I would love to find a good whole foods crescent roll recipe but I can’t seem to find one that tastes as buttery and delicious as the Pillsbury variety. In the meantime, we will enjoy this once a year! My recipe does not have balsamic on it like this photo, but I imagine it would be very tasty!
Wrapped Asparagus with Hollandaise Sauce

Ingredients
- 1 bunch asparagus, woody ends cut off and steamed
- 2 Pillsbury Croissant tubes (Crescent rolls)
- ½ c butter
- 2 T Flour
- 1 T Dijon mustard
- ½ t tarragon leaves, crushed
- ½ t salt
- ¼ t ground black pepper
- 1 c heavy whipping cream
Instructions
- Steam asparagus, remove from heat and immediately bathe in cold water. Roll a bunch of 2 or 3 asparagus in 1 croissant triangle from tube of dough. Prepare sauce by melting butter on medium-low heat, then adding flour. Once well combined add Dijon, tarragon leaves, salt and pepper. Stir well, then lower heat. Add whipping cream. Heat through taking care not to over heat or allow to boil as sauce will separate and get clumpy. Set aside. Bake asparagus rolls according to baking instructions on Croissant package. Once rolls are cooked through transfer to serving plate and pour a bit of sauce on each roll. Serve and enjoy!
