Simple, refreshing and cooling. I recommend halving this recipe and serve it with any Indian dish. An essential part of any Indian feast.
Cucumber Raita

Ingredients
- 2 medium cucumbers, peeled and grated (we
- prefer finely cut chunks not grated )
- ½ t salt
- 1 c plain yogurt or sour cream (yogurt is best)
- 1 t roasted cumin seed*** (I rarely use this)
- ¼ t paprika for garnish
Instructions
- Mix grated (or chopped) cucumber with salt. Let set at room temperature for ½ hour. Squeeze out and discard excess water.
- In a bowl, combine cucumber, yogurt and cumin. Mix thoroughly. Transfer to a serving dish, garnish with paprika and chill before serving

***To roast cumin sauté in small heavy pan and medium heat, using no oil for 15-20 seconds, until it turns a shade darker.
