Fall = pumpkin cookies! We love this recipe and it is very adaptable. I make many, many substitutions to make it slightly healthier. (see substitutions in notes)
Pumpkin Chocolate Chip Cookies

Serves: 6 dozen
Ingredients
- 3 cups canned pumpkin
- 3 cups white sugar
- 1-1/2 cups vegetable oil
- 3 egg
- 6 cups all-purpose flour
- 2 tablespoons baking powder
- 2 tablespoons ground cinnamon
- 1-1/2 teaspoons salt
- 1 tablespoon baking soda
- 1 tablespoon milk
- 3 tablespoons vanilla extract
- 6 cups semisweet chocolate chips
- 2 cups and 3 tablespoons chopped walnuts (optional)
Instructions
- Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
- Add vanilla, chocolate chips and nuts.
- Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
Notes
My substitutions:
3 c of sugar: 1½ c sugar and 1½ c agave nectar
1½ c oil: 1½ c applesauce
6 c white flour: 3 c wheat and 3 c white
